Cheery Lemon Cake
I don’t know about you, but I am obsessed with lemons in any form. When life gives you lemons, make lemon cake, lemon squares, lemonade etc. Here’s a recipe for a delish lemon cake that I make for all of the happiest occasions. Birthdays, holidays, Fridays… whatever day! This cake will cheer you up no matter what. Plus, the frosting is quite literally the best frosting I have ever tasted… sweet with the perfect hint of citrus!
Recipe
Ingredients:
4 egg whites
1 & 1/2 cup of sugar
3/4 cup vegetable oil
2/3 cup of milk
2 lemons (one for the cake, one for the icing)
1 & 1/2 cup flour
3/4 cup cornstarch
1 tablespoon of baking powder
2 sticks of butter (frosting)
4 cups of confectionary sugar (frosting)
2 tablespoons of half & half (frosting)
Directions:
1. Preheat the oven to 350°F
2. Butter a 9x9 pan
3. Beat egg whites until stiff peaks form & set aside
4. Beat sugar, yolks, and vegetable oil for a few minutes
5. Add milk and the juice of one lemon
6. Sift flour, cornstarch and baking powder over the mixture and stir
7. Fold egg whites into the batter in four additions.
8. Pour into pan
9. Bake for 35-40 minutes
10. Let it cool and make the icing!
Lemon Icing Recipe:
1. Beat butter until soft
2. Slowly incorporate confectionary sugar
3. Add half & half
4. Add the juice & zest of one lemon
Notes:
Caramelize your leftover lemon & peel by sautéing it with sugar & water for a beautiful topping
This cake stays good for days in the fridge
Feel free to add coconut (flakes and milk to the frosting) for a twist!
