Easy 2-Ingredient Homemade Pasta

I learned this recipe at a small pasta shop in Rome, Italy with my boyfriend Alex. We made homemade pasta with various sauces and shapes and we were served way too much red wine. I want to bring the taste of Italy to your home with a super quick - 1 hour total (with 40 minutes resting) pasta recipe that feeds 6 people!

Recipe

Ingredients:
3 cups all-purpose flour
4 large eggs (or 5 small eggs)

Directions:

1. On a large flat clean surface place the flour in a mound.
2. Crack all 4 large eggs into the center of the mound of flour creating a well to hold the eggs.
3. Break the yolks of the egg and gently bring the flour into the center of the well using your fingertips.
4. Keep incorporating the flour into the eggs until all the flour has been absorbed.
5. Once the dough starts to form, bring it together with your palms and knead into a smooth dough. 
6. When the dough forms a ball, let it sit for 15-30 minutes
7. Flour your work surface and rolling pin and roll the dough until it’s as thin you like!
8. Cut your pasta into its desired shape and let it sit for 15-20 minutes before cooking

Notes:

I think the easiest way to cut pasta is to fold the dough twice and cut across to get a fettuccine like pasta. If you have a pasta machine, this is your time to shine!

Lazy Pasta Sauce I Made:
1. Pour in a whole bottle of tomato sauce (Lol)
2. Add a few splashes of half & half
3. Add oregano & basil
4. Splash in a tablespoon of EVOO
5. Simmer for 20 minutes and then add cooked pasta to the sauce
