DECADENT BANANA BREAD RECIPE
I love bananas and chocolate, so this recipe is the perfect combination. It’s banana-y, it’s chocolate, and it’s perfectly rich. Plus, it’s perfect to up your quarantine baking game! It’s a fun (albeit slightly messy) family recipe that everyone can have fun with. So let’s start mashing bananas!
Recipe
Ingredients:
1 & 2/3 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup + 2 tablespoons sugar
2 eggs
1/2 cup oil
3 & 1/2 bananas (very ripe) mashed
2 tablespoons plain greek yogurt
1 teaspoon vanilla extract
As many chocolate chips as you would like :)
Directions:
Set oven to 350 degrees F. Line the bottom of a loaf pan with parchment paper.
Sift together the flour, baking soda, cinnamon, & salt. Beat sugar & eggs with a whisk until light and fluffy, about 10 minutes. Drizzle in oil. Add mashed bananas, greek yogurt, and vanilla.
Fold in dry ingredients and chocolate chips.
Pour into a lined loaf pan and bake for 45 minutes to an hour.
Notes:
You could add walnuts to this recipe for a delicious crunch
It makes about 8 slices of thick banana bread
The greek yogurt could be replaced with sour cream or creme fraiche - or even vegan yogurt
