The Best Lemon and Blueberry Sweet Bread

Lemon lovers rejoice! I am showing you quite possibly the best lemon and blueberry sweet bread. It’s quick (just over an hour), it’s sweet (lemon glaze), it’s moist (lots of fresh blueberries), it’s tangy (lemon zest), and it’s delicious! This recipe is adapted from a Taste of Home recipe I found and makes 12~ slices.

Recipe

Ingredients:

  1. 1/3 cup butter, melted

  2. 1 cup white sugar

  3. 1 lemon (zested and then juiced)

  4. 2 large eggs

  5. 1 & 1/2 cups all-purpose flour

  6. 1 teaspoon baking powder

  7. 1/2 teaspoon salt

  8. 1/2 cup milk

  9. 1 cup fresh blueberries (can use frozen!)

  10. 1/2 cup chopped nuts

  11. For the glaze: juice of one lemon & 1/4 cup confectionary sugar

Directions:

  • Preheat the oven to 350 and butter a loaf pan

  • Zest the lemon and set aside

  • Mix the butter, sugar, lemon juice and eggs.

  • Separately, Combine the flour, baking powder and salt; stir into egg mixture and milk

  • Roll the blueberries around in 2 tablespoons of flour so that they don’t sink to the bottom of the loaf while baking

  • Fold in the blueberries and lemon zest. 

  • Bake at 350° for 60-70 minutes or until a toothpick inserted in the center comes out clean.

  • Combine glaze ingredients; drizzle over cooled bread. Enjoy!
