Vegan Chocolate Chickpea Blondies
Let’s be honest. We all want to eat healthy - but we don’t want it to taste healthy. Don’t get me wrong, I am a kale fiend. Except when it comes to dessert, it should taste like a chocolatey pillow. That’s what I have for you today. I saw that Samah from Dada eats makes delicious chickpea blondies and I decided to make my own version that includes ingredients we all probably have in our pantries. This recipe takes around 30 minutes, makes 12 blondies, and tastes like a DREAM. Let’s get baking!
Recipe
Ingredients:
1 can of chickpeas drained and rinsed
1/3 cup peanut butter
1/4 cup maple syrup
1/2 cup sugar
2 tsp vanilla extract
5 TBSP AP flour
1/4 tsp salt
1/4 tsp baking powder
1/4 tsp baking soda
1/2 cup chocolate chips
Directions:
Preheat oven to 350 degrees, and grease an 8x8 pan with butter or oil for a vegan version.
Drain and rinse chickpeas
Add chickpeas, peanut butter, maple syrup, sugar, vanilla, flour, baking soda, baking powder, and salt into a food processor (or blender if you don’t have a processor) and process until batter is smooth. You’re adding every ingredient except the chocolate into the food processor/blender.
Fold chocolate chips into batter
Transfer to the buttered/oiled 8x8 baking pan
Add some chocolate chips to the top if you’d like!
Bake for 20-30 minutes, until knife inserted comes out clean and edges begin to brown. The batter will look a little under-baked, but will come together after cooling! Enjoy!
