4 Ingredient Easy Ricotta Gnocchi

Get ready for the dreamiest (and easiest) ricotta gnocchi recipe! I have to be honest, I like ricotta gnocchi more than potato gnocchi. These soft cheesy pillows of ricotta are the perfect meal that you will devour. This recipe makes around 5 servings - but I ate nearly all of it because it was THAT good. For extra fun, make a cheesy sauce and turn it into a mac n cheese gnocchi.

Recipe

Ingredients:

  • 1 cup ap flour

  • 3 large egg yolks

  • 1 & 1/2 cup whole milk ricotta

  • 3/4 cup parmesan

Directions:

  1. Start boiling some well salted water

  2. Drain your ricotta by putting it between two paper towels and putting a heavy object on top of it for 2-3 minutes

  3. In a medium bowl, mix ricotta and egg yolks

  4. Add flour and parmesan, mix well

  5. Form into a sticky dough

  6. On a well floured surface, cut dough into 8 pieces

  7. Roll out each piece and cut into desired size of gnocchi

  8. Sprinkle and toss dough with flour so it does not stick together

  9. Put in boiling water, you’ll know it is ready when it rises (30 seconds - 2 minutes)

  10. Sauce with whatever you would like. I made a roux and added brie and mozzarella for a mac-n-cheese gnocchi
