Fluffy and Moist Orange Cake
This is the most flavorful and fresh cake I have ever eaten. I am a huge citrus fan and this cake is the perfect combination of tangy, sweet, and all around delicious. I found this recipe on “Happy and Harried” and need to give them ALL the props because this cake is just brilliant. Get ready for the fluffiest orange cake you have ever tried!
Recipe
Ingredients:
Butter – 1/2 cup, softened for 20 seconds in the microwave
White sugar – 1 cup
Eggs – 2, large
Grated orange zest (I used 3 oranges worth of zest but feel free to adjust)
All purpose flour – 1 1/2 cups
Baking powder – 1/4 tsp
Baking soda – 1/4 tsp
Juice of one orange (or 1/4 cup orange juice)
Buttermilk – 1/4 cup
Vanilla extract – 1/2 tsp
Orange syrup
Juice of one orange – 1/4 cup
Sugar – 1/4 cup
Orange infused sugar glaze
Powdered sugar – 1/2 cup
Milk – 2 tbsp
Juice of one orange
Directions:
Pre-heat the oven to 350 degrees F. Butter and flour a 9”x5″~ loaf pan.
In a mixing bowl, beat butter and sugar together until fully combined.
Add eggs and orange zest and beat until fully combined.
Sift the flour, baking soda & baking powder into a medium bowl. Combine.
Mix the orange juice, buttermilk and vanilla extract in a small bowl.
Alternating incorporating the wet and dry mixes into the mixing bowl.
Transfer in to the prepared pan, and bake for 40-45 minutes or until a knife or toothpick comes out clean.
While the cake is baking, make the syrup and then the glaze.
For the syrup: Heat orange juice and white sugar in saucepan until slightly thickened. Cool.
For the glaze: Combine the powdered sugar, milk and orange juice. Mix until smooth. Refrigerate.
Put the cake on a cooling rack and poke holes in the top with a fork. Pour the syrup on top.
Put the glaze on top once the cake is cooled
