Easy Pumpkin Muffins
These easy vegan pumpkin muffins are soft, spiced, and perfect for a cozy autumn treat!
Ingredients
15 oz pumpkin puree (one can)
1/3 cup melted butter (any kind)
1/2 cup milk (any kind)
1 1/4 cups brown sugar
1 3/4 cup AP flour
1 tbsp baking powder
1/2 tsp salt
3 tsp pumpkin pie spice
For the (optional) crumble
1/2 cup flour
1/2 cup white sugar
1/3 cup melted butter
Recipe (makes 12 muffins)
Preheat the oven to 375F or 190C.
Grease a muffin pan or use liners.
In a large bowl, mix your melted butter, brown sugar, milk, and pumpkin puree. Mix until combined.
Sift your flour over the mixture.
Add your baking powder, salt, and pumpkin pie spice to the mixture. Gently mix.
Fill your muffin tin.
Optional* If adding a crumble, combine your sugar and flour. Then, slowly pour in your butter while mixing with a fork. Once the mixture looks sufficiently crumbly, add to your muffins.
Bake for 20-25 minutes, or until a toothpick/fork comes out clean.
Cool and enjoy!
