Garlic Rosemary Mustard Roasted Potatoes
I feel like everyone believes that they make the best crispiest most flavorful roasted potatoes. I am here to add my recipe to the madness. I have been told my recipe is the best from pleased brunch guests and my mother alike - which is all that matters to me. Get a taste of these crunchy flavor packed baby potatoes ASAP!
Ingredients:
•1 pound small red or yellow potatoes
•1/2 yellow onion chopped small
•2 cloves garlic (minced)
•3 tablespoons EVOO
•2 tablespoons dijon mustard
•Rosemary
•juice of a lemon
Recipe:
Preheat the oven to 425. Prepare a baking sheet with EVOO or butter.
Wash and then cut the potatoes into quarters.
Toss the potatoes with all of the ingredients and separate onto the baking sheet.
Bake for 15 min and then shake the baking tray and bake for another 15 min. I then shook it up again and baked for another 5 to get them extra crispy! Add salt & pepper.
