Truffle Mac n Cheese (Super Cheesy Edition)

You all asked and I turned this recipe around in RECORD TIME. This truffle Mac n cheese is so creamy and truffle-y you will be obsessed. I don’t know about you -but I find most Mac n cheese recipes not cheesy enough and most truffle based recipes not truffle-y enough. In order to combat this I have the cheesiest truffliest pasta recipe you need to make ASAP!

Recipe

Ingredients:

1. 2 8oz blocks of cheese (I used mild & sharp cheddar - gruyere also works well)

2. 4-6 servings pasta (I tried to do 5) I used orecchiette but shells/elbows/ penne would work!

3. 3 tbsp truffle oil (most recipes skimp on the truffle oil! this will taste truffley i promise)

4. 1 tbsp mustard

5. 1 tbsp flour

6. 4 tbsp butter

7. 1 cup milk

8. 1 cup half n half

9. Bread crumbs/Panko

10. Seasonings of choice: I used a lot of garlic powder, a lot of onion powder, salt, pepper, and a dash of red pepper flakes. You need to season it!

Directions:

1. Preheat your oven to 375 F. Prepare a baking pan (the one I used shown above) with butter or oil. Start boiling your pasta water. 

2. On low heat, melt your butter in a pan. Once fully melted, add your flour. Once fully combined, add milk and half and half. Once fully combined, add all of your cheese. Take it off the heat. 

3. Add all of your seasonings. Add your mustard. Add 2 tbsp of your truffle oil.  Combine. 

4. Add cooked and drained pasta into the sauce. Pour into prepared baking pan. Melt better and mix with bread crumbs and 1tbsp of truffle oil. Pour on top. Bake for 10-15 minutes or until top is crispy. Enjoy!
