Pasta primavera: winterized

Hey! Looking to get your veggies and pasta in? Look no further. This recipe is creamy, tangy & chock full of nutrients.

RECIPE

2 servings penne

2 carrots 

2 asparagus cut

1 cup peas 

Half white onion

1/2 cup parm cheese

4 cloves garlic minced 

1 tbsp truffle oil (optional)

3 tbsp EVOO

1 tbsp lemon juice 

Italian seasoning 

2 tbsp 1/2 and 1/2


Directions:

  1. Boil water for pasta

  2. Sautee EVOO. Add veggies starting with carrots and onions if using.

  3. Add garlic, lemon juice, half and half and seasonings.

  4. Reserve 1/3 cup pasta water. Add to sauce. Drain pasta & add to sauce. Add parmesan and truffle oil.
