The Best Roasted Cauliflower Hummus
The snack all of your friends will be obsessed with is here. I was so convinced that cauliflower would not make good hummus but it was… unreal. I need to share this with you all so that you can experience all of the cauliflower goodness for yourselves!
Recipe
Ingredients:
Whole head of cauliflower (cut into florets)
Olive oil (for tossing the cauliflower in and adding at the end)
1/4 cup tahini
1 clove of garlic
juice of 1 lemon
1 teaspoon coriander
1 teaspoon red pepper flakes (+ more for decoration)
DIRECTIONS:
Preheat your oven to 420 degrees F.
Toss your cauliflower in olive oil, salt, and pepper and bake for 20-25 minutes.
Toss the tahini, a splash of EVOO, a splash of salt and pepper, garlic, lemon, coriander, and red pepper flakes into your blender or food processor.
Blend and add water until smooth. Add the roasted cauliflower and blend, adding water until your desired texture. TIP: you will want to wait until the cauliflower has cooled down before incorporating.
Add extra EVOO and red pepper flakes on the top for dipping. Dip with whatever you like! I use pita chips and carrots.
ENJOY!!! You can keep it in the refrigerator for a few days.
