Baked Ricotta with Olives & Thyme

I have been wanting to enjoy olives to no luck until I made this recipe. The olives are warm, salty, and perfectly paired with creamy spiced ricotta and crunchy bread. This is a perfect recipe for holiday sharing!

Serves 3-5

Ingredients

-2 cups of ricotta

-olive oil

-1/2-1 cup olives

-fresh or packaged thyme 

-2 cloves garlic 

-1/4 baguette 

-salt & pepper

Directions

1. preheat your oven to 375

2. Strain the ricotta and let sit for 10 minutes 

3. Mix a splash of olive oil, thyme, and two cloves of minced garlic into the ricotta

4. Pour the ricotta into a small baking tray 

5. Add the olives and some more thyme on top

6. Bake for 40 minutes

7. Slice baguette bread thinly and cover with olive oil, salt & pepper. Bake for 15 minutes at 375, flipping halfway

8. Take the bread and ricotta out 

9. Add more olive oil and thyme. Serve! I hope you enjoy!
