Healthy & Cozy Vegetable Soup
This soup is so simple and delicious. The recipe makes a family size soup but no judgement if you eat it all like I did. It’s such a good way to get your vegetables in. Creating and eating this soup is relaxing and you will fall in love with the savory flavors!
Ingredients:
5 cups of vegetable (or chicken) stock
1/2 cup peas (fresh or frozen)
1/2 cup chopped carrots (fresh or frozen)
2 potatoes chopped
6 florets cauliflower
3 stalks of celery chopped
3 cloves of garlic, minced
1 onion, chopped
For topping
Parsley
Parmesan
1 tbsp truffle oil
Croutons
Directions
In a saucepan, brown the onions with a splash of veggie stock. After a few minutes add the garlic. After a few more minutes, add all of the vegetables. Top with vegetable stock and mix it up. Cover for 1.5 hours.
Move the mix and allow it to cool to room temperature. Blend momentarily (there should still be some chunks if you want some texture!)
Warm and serve with parsley, parmesan, croutons and truffle oil on top.
